Why is our hotel gluten-free?
Coeliac disease means that gluten (a protein found in cereals) causes inflammation and damage to the mucous membrane of the small intestine. This leads to digestive problems and consequently to a deficiency in certain vitamins and nutrients. Around one in a hundred people suffers from coeliac disease. By the way, South Tyrol even has its own coeliac disease association, AIC Südtirol. Gluten is found in wheat, rye, and barley, for example, as well as in couscous, kamut, seitan, and udon noodles. You can gladly dine gluten-free at our wellness hotel, but we ask you to inform us of your intolerance when booking.
What alternatives are there to foods that contain gluten?
There are a number of foods that do not contain gluten or are not prepared with wheat flour. Our gluten-free hotel in South Tyrol has worked intensively on the gluten-free preparation of food – “gluten-free” means that food may contain a maximum of 20 milligrams of gluten per kilogram to allow people with coeliac disease to eat it with complete peace of mind. The menu at our hotel with gluten-free cuisine therefore includes cereal products such as quinoa, buckwheat, millet, or soya, side dishes such as polenta, rice, potatoes, or pulses, dairy products, meat and sausage products, and, of course, plenty of fresh fruit and vegetables.

Most of them are very easy to cook at home, for example porridge made with buckwheat or millet flakes instead of oat flakes. If you like baking, you can simply replace wheat or spelt flour with almond flour or ground nuts to make gluten-free cakes and biscuits. If you don’t want to go without bread at mealtimes, you can opt for bread made out of seeds or protein bread. This means you can enjoy the most delicious dishes despite coeliac disease – we’ll be happy to show you a few tricks and tips at our hotel.
